Jerusalem Artichoke- (aka Sunchokes)

Despite its name, these plants are not from Jerusalem and are not artichokes!  Instead, they are an easy to grow tuber used for cooking and baking in the same ways as potatoes, but unlike the potato they can also be eaten raw. They have a similar texture to a potato, but a sweeter, nuttier flavor. When raw and sliced thinly, they are fit for a salad. They produce perennial sunflowers that are yellow and appear in late summer. Tubers available in bags. Approx. 0.5 lbs. each.
